|3/4 cup||soft butter or margarine|
|1 1/2 cup||sugar|
|1 1/2 cup||grated zucchini|
|2 1/2 cup||flour|
|2 tsp||baking powder|
|1/2 cup||chopped almonds|
|6 oz||chocolate chips or raisins|
Cream butter and sugar. Beat in egg and vanilla then stir in zucchini. Add combined dry ingredients, fold in almonds and chips.
Drop by heaping teaspoons onto greased cookie sheet.
Bake at 350 F for 15 minutes or until lightly browned. Cool on wire rack (sift powdered sugar over cookies).
Yield 4-5 dozen
